I’m always excited but also a bit nervous when I first cut and taste a new cheese. is there no contamination? Is developed enough? Or worse: is the taste already too strong?

Blue cheese progress!
The process is never the same. Last time it took two weeks before the mould would start to show, now it’s already developing nicely after 4 days. Also the cheese is very firm (which is a good thing).

But last week he comes home with our seasonal European favorites and a funny blue cheese from Kentucky. I AM SHOCKED. But he thinks it's very unusual. Sequatchie Cove Shakerag Blue. It's delightful! It's sooo fruity. Pineappley and fudgy textured. It's my new favorite cheese.

A little bit about us here. We milk 250 goats all year round on our own farm. Using that milk to make three types of cheese. Irelands only pasteurised blue goats cheese ‘Boyne Valley Blue’, then a Tomme style white cheese ‘Boyne Valley Bán’ and our newest cheese, a Manchego style hard white cheese ‘Big Bán’.
