Pousse cafés are a class of seldom-seen layered cocktails. The term itself is French, and means "push coffee", or chaser—the idea seems to be that these drinks were introduced as a , or an after-dinner, after-coffee drink to aid digestion. Personally anyone my age thinks of a roll of Lifesaver candies when seeing this drink. Stingray (definitely an alias), our (adjacent) bartender claimed to be an expert and we tested his claim, ordering dozens of these.
