Shit night turned kinda turned into shit week but it is thankfully over. Finally stuck with sourdough starter long enough to make some loaves though! There's some commercial yeast in there since I was a little nervous but overall I'm very happy with how they turned out!

It's bloody hot here and I have my oven on to 450 for baking bread. I'm just sort of milling around in my basement while I wait.
I have one and I would like another. Fresh loaves kick ass and usually don't make it far through the second day.
Five bucks+ a loaf for bread as good as that! More if I make fancy loaves. And I would have to brush my hair and go outside!
There IS a bakery in town and it makes wonderful things, but it's expensive and uphill.

A couple of batards for #brekky. These are 100% AP, 85% water, 15% “harvest grain” seed mix from King Arthur and 50% starter (100% water). Baked in a very large cast iron pot (big rectangular thing) at 450F, 15min lid on, 18min off (actually I bake on the lid, upside down). #Sourdough #BreadBaking #baguettes

Made a loaf of basic #sourdough (left) and a loaf of pan Candeal today.
The Pan Candeal is mostly for making #gazpacho. It is a dense bread made with bread flour and semolina flour.

Pan de cristal, an airy fun bread bake. 100% hydration. Pretty soupy mix to start with but it develops structure quickly. High protein bread flour is a must. The final loaves are surprisingly light weight. IMO, easier than ciabatta, but very similar bread.
