Update! Here’s the final result of the Polish Milk Rye bread. I will probably slice into one tomorrow for lunch. Aside from planning the timing for the sponge 12 hours in advance of making the dough, this was a super easy recipe, and as a bonus you get two loaves for your effort. so, hot off my cake-baking journey, i couldn’t let a week go by without baking bread, haha. This week i’m trying to shake my routine up a bit and instead of my weekly sourdough loaf, i’m getting back to learning baguettes! i made this dough yesterday, and after a night in the fridge, here they are, shaped and resting in their (cheater!) couche pans, rising for an hour. look at those bubbles on the dough! 😍 🥖#BreadPost

It’s time for another bread baking update from me: I’m still randomly working my way through Stanley Ginsberg’s “Rye Baker” book, and this time it’s a German “Paderborn Rye,” (p. 345) a mixed rye and wheat flour loaf perfumed with ground caraway, anise, fennel and coriander seeds. Goes well with strong cheeses & charcuterie. (Note: The top is docked with random shallow holes with a chopstick, that’s why it looks like that.) #BreadPost #Baking #Sourdough

it's Monday, and time for me to update from this past weekend's baking! I'm continuing to bounce around in Stanley Ginsberg's "The Rye Baker" book. This past weekend I tried a Dutch recipe, "Frisian Black Bread" -- a very wet dough, almost like a batter, so it had to be baked in a pullman pan. I am very pleased with the result! Sour & chewy -- delicious with gouda cheese. #Breadpost #Baking #RyeBread

Catching up on my bread-baking posts: I tried my hand at something new: @sourdough2021 's "Multi-Seeded Sourdough with San Francisco Starter" recipe. Both loaves didn't get a huge amount of oven spring, but came out rather well, i think. I had to make some educated substitutions for a couple flours & things i didn't have (e.g., a certain dried bean, some minor flours), but the process was clear, the dough came together beautifully, and it smells great. #BreadPost #Sourdough
