Acqua Pazza translates literally as “crazy water”.

It is a lightly herbed broth frequently used to poach fish. Origin - Italy.

This morning's side project: a batch of veggie broth.

It'll end up as either a bean chili, or maybe I'll add some ginger and make some kimchi dumplings. Very TBD at the moment.

Ok so it turns out I can make way, way more out of chicken bones than we could ever reasonably consume as a family.

I don't want to just waste those bones tho... what do I do?

This is my favorite dish in the entire world. It's meaty, its mushroomy, its tangy, its rich, and noodley.

If your only experience with Beef Stroganoff is Hamburger Helper, give this recipe a look.

It takes a little longer but the results are worth it.

No photo for this one because we served it at a party and ate it all before we remembered!

Kitchen Accomplice Reduced Sodium Beef Concentrate, 12 Ounce $4.42

The 12 oz squeeze bottle contains concentrated broth equivalent to 28 cups of broth. Once open it'll last for 6 months in the fridge. Saves money saves space. They also make it in chicken and vegetable flavors.

No surprises that turkey broth is good to cook rice in & to add to a stir fry, but I thought I'd try baking some dressing/stuffing bread with it instead of water/milk. I don't think the fat content will affect things negatively? It's certainly rising just fine. In fact, I had to take the upper rack out of the oven where it's proofing.

And now for a post of Wot I Did On My Winter Break

So the archaeological dig into the chest freezer (which, miraculously, is still working, somehow), brought up bags and bags of bones I was "saving for broth."

I found the bones because I needed the freezer space, as I was doing a freezer inventory to .

I highly recommend doing food inventories BTW; this also gives you an idea of what needs to be eaten, what you have more or less of, and what you have to work with. You can find many variations of one online:

ooglester.com/search?q=freezer

The general idea is, you list what the food item is, how much of it you have, and what date you froze it and/or what date it needs to be used by. Spreadsheet, whiteboard, handwritten notes, sky's the limit!

So. To the bones. From slowcooker to sealing of the bottles, I got just about five 500ml bottles of stock/broth, when it can't be found here for love nor money. Pot of soup in the works soon, I think!

That's an image from that ran in the news here several years ago IIRC. Sometimes there's nothing like a good hot bath!
😆

Taiwan does whimsy in a big way. This would probably be from Taipei's Shilin night market area.

“Bread, water or ale, and a companaticum (‘that which goes with the bread’) from the cauldron, that provided an ever-changing broth enriched daily with whatever was available. The cauldron was rarely emptied except in preparation for the meatless weeks of Lent, so that while a hare, hen, or pigeon would give it a fine, meaty flavor, the taste of salted pork or cabbage would linger for days, even weeks.” atlasobscura.com/articles/perp
