#Camassia leichtlinii, Greater #Camas. Along with its near relatives this was an important plant food for many Salish first nations. The root is about the size of a pingpong ball when full grown, and has an earthy sweet taste when slow-roasted, but the sweetness is from inulin so it's a windy sort of food.
