I made carrot cake last night again. This time I used disposable mini loaf pans from the 100 yen shop. From a double recipe I was able to get five loaves. I wolfed down one of them last night absolutely devastating my attempt to lose 2 kg by the weekend 🙃 I’m giving the other four to friends today.

I tried making carrot cake for the first time tonight. It looks and smells really good but it’s still cooling down so I haven’t iced it nor tasted it yet.
The recipe called for some unsweetened applesauce but I didn’t have any do I made some from scratch. Was shocked it’s so simple!

Fortunately, it doesn't have those stupid nuts in them that too many people put in their carrot cake. But it still doesn't taste great. Carrot shreds are too big. It has raisins, but I guess that's okay. It tastes like they put rum or brandy or something in the batter.

One of my favorite distillery's, Kilchoman. We visited this farm distillery many years ago for the first time. And when visiting Kilchoman Distillery than pay a visit to Machir Bay as well. Looking out over the Atlantic Ocean from there, it's a fantastic place.
