Today's training module is how to #clean a #castiron pan.

As background I was making caramelized onions the other night. My husband and I were out on the porch doing the crossword together. It must have been challenging as I forgot about the onions.

I came back to the pan and the onions were stuck to the bottom and carbonized. I rescued what I could and left the pan for the following day.

Here is said pan. No amount of scraping would get the crusty onions off the bottom.

Pizza on the griddle, cast iron for the win!

Soo....I came home to a just-discovered maggot infestation in the mudroom and garage.

Still don't know the source for sure, but macgyvered a way to bring the trash out without touching anything too gross.

The point being: #castiron is on hold for a couple days. I think having the garage door open to release electrolyzed H2 and O2 probably let flies in.

Also, nobody wants to be in the mudroom or garage, including me.

#castiron #electrolysis worked pretty well on the first pan. There were some crusts left that I could (and had to) pick off with my fingernail. A second, smaller pan was completely cleaned in a few hours and a wirewheel cleaned the futz.

I also got a 20g can to do the larger pans--a 14" pan and a 15" pizza "stone".

Left work extra on-time to hook #castiron #electrolysis up for longer tonight

Spent an hour unable to convince the battery charger that I definitely for sure did NOT have a short. (Don't bother with #debugging questions--the device definitely didn't like MY part of the loop and was definitely WRONG.)

It turns out that these things can randomly decide they sometimes want to be first plugged in and then hooked up

It should be illegal to put a computer chip in anything under $500

Much of the precipitate(?) ends up on the electrodes (including the skillet). At 4h, I pulled it out to take a look and brush these clean for renewed efficiency.

The inside is noticeably less stripped. I'm guessing the anode on that side is less efficient + the distance is farther due to the concave shape. I rotated the pan for round 2.

#CastIron is god-tier.
I'd say it's incredibly weird it's so underrated because unlike most pans, they only get better with age, the non-stick can get to a mirror finish, and they're near indestructible.
Even if you accidentally let one rust, you can just sand off the rust, cook up some fatty food in it, and get right back to business.
But y'know, capitalism, and people want to sell you pans every other year.

Absent a scientific consensus on #castiron seasoning, I sampled a whole bunch of sources and picked out the common themes

1. clean surface
2. very thin layer of oil
3. heat
4. goto 2 at least once

The thin layer was surprisingly stressed (directly or indirectly ["upside down to let any extra run out", etc]) by a lot of sources.

The temperature was surprisingly unstressed.

So I'm assembling an #electrolysis tank to 100% strip a pan and boot one up to a good state as an experiment. #science

Is it possible that all the blog posts, articles, and videos about #castiron pan care and seasoning that the world needs already exist?

Is there, like, *peer-reviewed* #castiron seasoning instructions out there? Science-based?

I'm sick of "this is what my grandfather taught me" or "I've always found that" info. I want F A C T S.

This is "making clear ice", "guaranteed peelable hardboiled eggs" or "how to stop hiccups" all over again.

(In all seriousness, if you @ me with anecdata, I will block you.)

Went thrifting after lunch and now I apparently own a #7 Griswold sans smoke ring.
Looks slightly heat damaged, but it's not warped and should clean up pretty good.
