Another view of Cims de Porrera wine #cellar which looks more like the workshop of an alchemist. Here the original 19th century wine storage compartments have been adapted for new wine ageing techniques. Glass demijohns are used to to part age the wine which is then blended with the wine aged in oak barrels.

@marksquires I've spent 9.5 years running the #wine program at 68 year old restaurant. Wonderful to be able to buy wines and #cellar them until their ready. Nowadays I'm buying stuff that won't see the list until after I retire.
Honestly, #Bordeaux doesn't really excite me—just not that sexy or magical—but it's an interesting part of the gig. And Pontet-Canet is a favorite in the category.

Some of you may or may not know that I have a fairly substantial #beer #cellar.

I have a couple hundred bottles of #lambic that I’ve collected over the years, 13 years of cases of #Orval, barleywines, imperial stouts, and a bunch of other bottles worth hanging onto.

I try to pace my acquiring with my drinking but I always seem to fall behind (on the drinking).

@mickylindlar technically if you are using FFV1's lossless compression, it wouldn't be a mezzanine format. I have a feeling DIAMANT won't be able to support FFV1 natively. I think most restoration/editing softwares are waiting for FFV1 to be standardised by #CELLAR before they would support FFV1.
