Second time making this Beef & Ale Pub pie. It's filled with tender cubes of boneless beef ribs (which aren't really ribs), cremini mushrooms, onions, and a rich, brown gravy. The crust is unlike most others. It's made with sour cream & butter and holds up well when placed over the hot filling, then baked. It's strong, but not tough. Leftovers freeze well.

I'm old and foolish and this is the first time I've made pizza with poolish. Not sure how it's going to turn out, but I have high hopes.
And, as an aside, is it just me who finds one tomato plant leaf in every 28 oz. can of Cento Marzano tomatoes, or is this a signature thing?
I think the menu for this week will include the Breton Apple Pound Cake, Boeuf Bourguignon, some kind of galette, and I should make beef stock.
