Yesterday I made the last of my black raspberries into jam. Except I cooked it too long (I should have followed my gut, not the description in the recipe) and it’s overset. Instead of jam I have an amazing black raspberry taffy. Such a delicious mistake

2) Frittata w/ roasted potato/shallot/peppers/asparagus served w/ tomato slice on a fresh romaine leaf

Here is the belated picture of the complete meal: Pork loin roast in a red wine sauce seasoned with ginger, coriander seeds, cloves, curry powder and cinnamon; 100 curry; carrots with cardamom; semolina polenta.

20 min of kneading +
4 loaves of sourdough +
2 batches of marshmallows +
3 ramekins of Creme brûlée +
5 orbs of cotton candy +
1 counter full of ingredients +
10 eager students +
10 DIFFERENT projects
+ more loads of dishes than I could count (seriously, we used EVERY measuring cup)
+ 1 amazing GTA
+ 1 awesome kitchen manager
+ 2 bottles of water
= 1 very tiring Monday + 1 exhausted professor.

Today, I made a new artwork, a sculpture. It was a surprise, the crowd didn’t expect it. Phones came out and the crowd took pictures of my edible masterpiece. I felt proud. Then I sliced and served it. Twenty minutes later it was a beautifully delicious memory of when art and science collided. I have no regrets.

Don’t know what to call this, S.O’s idea. Whole bone-in chicken slow-cooked in chunky salsa + Chile Padilla, Mulato + cilantro. That’s it. Tastes great, but feels like cheating.

Char Siu turned out tasty, but the meat got too dry. Next time, I have to concentrate the marinate to a more sirupy constency, before putting it into the oven. Then I hopefully get that beautiful glaze on more quickly. Served it with rice and red cabbage.
