Typed this for my daughter and then thought “why not share it with the world?” #ChickenSoup #vegetableSoup one each: potato, onion, carrot, broccoli, cauliflower, tomato - chopped. Heat a few tablespoons of olive oil, add chopped stuff, can of diced tomatoes, 3 cups water, 1/4 cup of rice, barley, or noodles. Add 1 tsp each salt, basil, oregano, cumin, paprika, & 1/4 tsp garlic and black pepper, and a can of chicken or leftover cooked chicken. Cook in low heat 2 hrs. Change it however you like.

My chicken soup recipe is quite simple:
Whole chicken, or bone-in skin-on pieces
Carrots
Onion
Celery
Salt and pepper to taste
Everything in a crock pot, cover with water, and cook all day.
Add noodles if desired towards the end.

And I learned recently, put a dollop of horseradish in the bowl when serving. Kicks whatever it is in the teeth.

I'm exhausted but I'm cooking a chicken soup tomorrow, and there's something beautiful about that that gets me excited every time. I love chicken soup, and not to brag but from what I've learned and the techniques I use... mine is better than even my grandmother's chicken soup.

Cooking chicken soup today, even though it's a hot summer's day. Mostly for mum who likes this soup and finds it easy to eat.

Made the stock first, took the chicken meat off the bones, added in chopped veg, herbs and seasoning.

It's bubbling away now. The house smells yummo.
