Chinese fried rice is a form of "chaos" cooking, which is why I never order it at a Chinese restuarant and never cook it at home.
It's just a bunch of stuff mixed in w/rice and sauted in a wok. Not exactly "high cuisine" and not really very interesting Chinese cuisine either.

Hainanese-styled 清补凉 (qing1bu3liang2). It's quite well-known to the Chinese diaspora but I guess every shop has its own varieties lmao. The special thing about the Hainanese style is that they would use coconut milk instead, and the local Hainanese said that there would be this kind of shop on almost every corner of Hainan island.
It's not my favorite since I don't like coconut milk. However, it's good for the summertime and for the coconut lover

My evening movie watching snacks are more leftover dim sum from yesterday. These are baked bean curd rolls - stuffed with prawn & lobster with Chinese chives. I drizzled lots of sriracha hot sauce atop.
The dim sum is from Jade Fountain Restaurant - located on the lower level of the Red Lion Inn on border of #VictoriaBC & #Saanich on Douglas.

Making Bourbon Chicken tonight without the Bourbon. I found a recipe where you replace the Bourbon with Apple Juice. It comes out tasting great. It takes about 30 minutes form start to finish, so a pretty quick dinner. I add broccoli for our veggie. #food #chinesefood #chicken
Yesterday I made Hot and sour soup, or Peking Soup as Norwegian chinese restaurants usually name it. Everything was fine until I tried adding two whisked eggs at the end. The instruction said to add it slowly in one thin stream and also make motion in the soup while adding it. I think I should have poured it even slower, because it made the soup a bit "carbonara"-like. However, it was still very tasty and yummy. Will cook again! #cooking #chinesefood

Pushing my very elderly rice cooker to the limit in pursuit of clay pot rice, or as near as I can get without having an actual clay pot. Given that the elderly rice cooker is a 20-year-old Breville and not a “proper” one, I’m really impressed with the way it’s performed.

They're also called "Thousand Year Old Eggs" and, back in the day, they were sold packed individually in mud and sold out of huge pots.
Now you can just buy them commercially in 99 Ranch and other Asian markets labled as "Preserved Duck Eggs." I got 1 left in a box in my frig right now
