This year we’ve taken inspiration from Tom Parker Bowles’s Christmas & Other Feasts. It features tartiflette, poutine, mulled wine salmon and gin salmon, Welsh rarebit and poached pears with cheese, honey and truffles (the last thanks to the St Pancras’ manager’s discretionary gift of Stilton with honey and truffle on Tuesday).
