I am familiar with Jerusalem artichoke which I love but don't want to plant in the ground as they will overtake our garden. Ethiopian style collard greens, made with finely chopped onion, garlic, and fresh ginger, sauteed in olive oil. A quartered jalapeno is added towards the end of cooking to give it a small kick.

Happy #Thanksgiving, to those celebrating in the U.S. This is what I ate at my family's get-together. My extended #Family does unfortunately cook a turkey, but all of the sides were made #Vegan. My mom even made me some stuffed squash. 'Twas #Delicious, and it filled me up.
I also made #Cookies.
