Algorithm: Take fruit that's no longer appealing: soft, wizened, bruised, starting to go moldy*. Remove inedible bits, cut into pieces, put in a saucepan with water and a sprinkle of sugar (amount depends on how much fruit you have). Simmer 10-20 minutes, add sugar/honey/cinnamon/lemon/etc. to taste; simmer 10+ minutes. Voila!
*After cutting it off, wash and taste the fruit to make sure the mold hasn't spread invisibly.
