#Confit #duck legs in sour #cherry sauce with California wild rice. The duck is firstly cooked in fat, & later braised in a reduction of homemade cherries set in spirits. The spirits include sweet vermouth, brandy, and spices. The sauce from the reduction includes the spirits, a spoonful of tomato paste, Ghirardelli Chocolate Company cocoa powder, laurel leaf, clove, cinnamon, black pepper, juniper berry, & honey. Duck is from Mary’s Duck in Sanger, CA
