Butternut Congee With Chile Oil (paywall) : cooking.nytimes.com/recipes/10 (essentially: cook rice with stock, garlic, butternut, kombu. Stir vigorously. Top with chilli crisp and spring onions. Can use cooked rice for shorter cooking time.)

There is nothing more comforting than a bowl of hot . Plain, utterly unadorned. In my fave aqua blue handmade pottery bowl, a gift from a friend. It takes nearly 2 hours to make, but it's worth the wait every single time.

I cook it quite differently - I use a traditional Chinese clay pot, and put it on a heat diffuser on the lowest heat on the stove top. Like this, I can let it come to a simmer and simmer away for 2 - 3 hours. It takes a long time for the rice to come to a boil, and then it is just on simmer for the rest of the time.

I stir it occasionally and top up with water as needed.

Each one is flavoured according to the needs and available ingredients on the day; ditto for its toppings.

If we've been connected on the other platform for a long time, you'll know how much I love congee in Winter.

Meera Sodha makes a delicious looking celery and braised mushroom congee, altho I cook my congee for MUCH longer than she does. (Hetty McKinnon also has a "quick" congee that I've made and I have to admit that the shorter cooking times still produce a delicious result.)

I wonder how in the world did the word became the de facto standard name for Asian style rice porridge? My family hails from southern China, and we called it "" or "juk"--there's no real standard western spelling for it. Other Asian cultures have similar sounding names for it. Where the hell did congee come from?! I've NEVER heard anyone use this word except in western media.

Aha - okay, looked up gruel and it's apparently a watery porridge. So that won't be what happens here.

Must admit I'm intrigued by the idea of reclaiming the pejorative term 'gruel' to become a tasty and desirable thing. But perhaps that's a project for another time.

My savoury porridge might be more like a Scottish variant of Chinese – oats instead of rice.

Made my favorite comfort food for a sick kiddo today - .

This is my version, with green onions, chili sauce, a thousand year egg, a splash of soy sauce and sesame oil, and a dash of white pepper.

Mr. 4 year old eats a plainer version with just the soy sauce, sesame oil, and white pepper.

Transmitting my culture to the next generation is probably one of my favorite parts of .

How do you deal with ? Turned smoked turkey carcass into stock. Next day made smoked turkey congee, topped with chili oil (roasted the garlic for a twist), scallions, onion, fried shallots and a twist of lime.

Seriously a darn good batch of jook. It’s was my grandmother’s tradition to make a batch from the turkey carcass, but she didn’t have a recipe. It took me years to figure out the right ratio of rice to broth, and 2 years with this new stove to find the right amount of heat and time.
