I started with this recipe.

I cut the sugar and oil in half, and use a bit of orange juice if the dough is dry. I use coconut oil and coconut sugar. And we peeled a largish piece of ginger root , shredded it and added it in addition to the dried ginger.

Really nice cookies! And as healthy as cookies get. #CookieSeason

the past couple years I experimented with tweaking the batter recipe we used, and they were always chewy or burned. so this year I went back to our original and what do you know - perfection. this batter also cooks a bit faster so that didn’t take quite as long!
