I don't know why it didn't occur to me before but I have discovered that you can cut up a pot roast in smaller chunks big enough for two people and get like three meals out of a single roast. I cooked one of these chunks in my Instant Pot Mini with carrots, onions, and mushrooms and it came out great, with no giant hunk of leftovers to take up refrigerator space.
