My Girlfriend @adolwyn brought home Potato Soup from her school's Culinary Arts Program.

It was good but kind of bland so that's where I amped up the flavour profile.

Added Salt & Pepper, shredded cheese and Pecorino Romano to the soup and made it silky by adding butter.

Then I air-fried chicken breasts cut into cubes and used my own seasoning. I crisped up some thick-cut smoked bacon. Drippings were spooned on top of the soup.

Less than 24 Hours until kick off of Grey Cup 109, so I made this Smokey Bacon Chili.
Historically, Chili traces back to Mexico in the region that is now Texas. One of the ingredients they used was unsweetened dark chocolate which compliments the chilies giving the product that umami flavour. Since I didn’t have any unsweetened chocolate, I substituted with sweetened dark chocolate chips with yielded similar results.
