Cucamelon Refrigerator Pickles are fast and easy to make: 30 minutes prep and 2 weeks in the fridge result in delicious, bite-sized pickles.

The Cucamelon (Melothria scabra) is an annual vine in the Cucurbitaceae plant family that includes cucumbers, melons, and squash. Cucamelons are known by numerous names including Mexican sour gherkin, mouse melon, and in their native Central America, *sandita,* which means “little watermelon.” Cucamelons taste like a cross between cucumber and lime.

My recipe is based on my Father's original recipe that I learned as a child; I adapted it for cucamelons and published it in 2017.
