Dorade on bed of mangold leafs with reduction of a lemon sauce from glacé lemons and a jus of fennel, the green of the fennel, shallots, head if a dorade, garlic, pot-au-Feu and capers. Inspired by @alainducasse served with a Xynisteri white wine from Cyprus with flavors of lemon, herbs :)
