Kombu is not as available as it once was, sadly, and I purchase mine online. There are different types - and this article refers to them but doesn't list them.
But it does talk about the difference flavours you can get from soaking, simmering and boiling kombu - so rare to see this information.
There are several different types of dashi too. Kombu dashi can be used in place of bonito dashi for vegetarians. As its flavour is different, it can also be chosen for dishes by non-vegetarians.
As a base for miso soup is one excellent way of using kombu dashi. There is also an excellent recipe for oven cooked vegetables in #Nourish by #HollyDavis, where the veg are baked, covered, in a little kombu dashi made by including a piece of kombu and some water. It is most excellent.
It is also excellent with Ramen and all Japanese noodle dishes, as well as rice.

#Lunch today was a #StirFry of grilled #tofu, #broccoli, white onion, and green onion. I served this over some #Thai wheat #noodles that were fried and dressed with soy sauce the drowned it all in #vegan #dashi broth.

Curried Beef Udon
Very simple dish made with Dashi stock which provides serious Unami. Dashi is made from Kombu & Tuna which is fermented & dried. There are vegetarian alternatives made from shiitake mushrooms. The curry sauce is made from off the shelf Japanese Golden Curry blocks.
This recipe is from a fantastic book called Dumplings & Noodles by Pippa Middleton. A game changer.

I think it was from our landlady in #Rovinj in 1999-2000 that I first learned the principle of slow sauteeing garlic then adding strong flavors like anchovies and chicken stock to make a base for your sauce, always slow. So versatile. So good. A #Mediterranean form of #dashi.
This miso soup thing is actually working out pretty well. First batch I overnighted the kombu but I don't think it's necessary and the kombu wound up pretty slimy. The process is simple but requires periodic attention, so it's decent when working from home when you can get away for a couple minutes at a time.
Makes 4 human-sized servings, fewer for American pigdogs.
