Heute guter Zeitpunkt die #DeepDishPizza vegetarisch Reihe fortzusetzen.
Diesmal mit Poolish-Vorteig (ca. 25%). 15% des Mehls mit Maisgrieß bei 1,7% Hefe trotz des fettreichen Teiges. Bisher bestes Teigergebnis. Der Räuchertofu vor 2w war besser als der klassische jetzt. Auch ein Stück Zitrone in Tomatensauce übersehen, was K2 erwischt hat. Und zu früh aus der Pfanne genommen. War nicht komplett zerstört aber im Anschnitt nicht mehr "fotogen".

Explaining what a real Chicago deep dish pizza is to people from outside of the Chicago area is funny. The versions of it you see outside of Chicago are downright offensive 98% of the time. The 2% it's not offensive, it's a native that relocated and opened a pie joint. #Chicago #DeepDishPizza

This cast iron, gluten free, deep dish pizza is something I have been wanting to do but have been afraid to for quite some time. A lesson I seem to need to learn over and over again is to not let fear make my decisions for me! This ended up being really easy and turned out amazing!
