We're making pizza this week so that means lots of #sourdough #discard to use up. Luckily I have a great recipe to make #crumpets rather than having to throw it away.

In these 8 crepes/pancakes are 3 eggs, ~85g wholemeal rye sourdough, ~180g AP, salt and milk to get a batter consistency. To me important: staying in fridge overnight.

My valentines bake:
Sourdough brioche with rum raisins made with old (discard) Lievito Madre.
I always collect the leftovers from feeding my starters and use them in baking. Either for leavening (using a huge amount, of course) or as roux for additional hydration.
Only a very small amount goes to my plants as fertiliser.

Lemon flavoured sourdough “Brioche Au Sucre“ using old-very old LM. I’m always amazed how active this inactive, discard sourdough culture is. Sure a large proportion of the dough is old LM. A bit of sugar or honey helps reducing unwanted acidity so it will not taste sour. Perfect match to a cup of coffee.

Liberals and progressives HATE hearing about this: we ate that #recycling story right up. 🙃 So seeing things about #Terracycle, my interest is piqued ... and my scam radar is up. Their website is unambiguous: we recycle it all.
