The dough looks and feels great after a 4 hour bulk fermentation @ 26°C in my proofer. I have added 30% of my home milled flour into my recipe which includes some cracked Einkorn wheat. Another 1.5hrs in the bannetons and then an afternoon and overnight in the fridge @ 7°C before baking on Wednesday morning.

That’s a relatively high hydration dough. I wonder if higher hydration is typically needed for einkorn. Was it sticky to work with? Did it have a tight crumb or some big bubbles throughout after you baked it?
