I wrapped my leftover chicken #enchilada con #mole, along with the leftover refried beans and rice, inside a flour #tortilla, and stuck it in the oven.

For dinner tonight I made enchilada lasagna. One with chicken and tomatillo sauce, one chicken with an avocado creama, and one ground beef with a nice smokey adobo chili sauce.
Wow. It was good if I do say so myself.

I made green #enchilada sauce today! Since I'm making #rotisserie #chicken tomorrow for dinner, I'll debone the leftovers and make #enchiladas!
FYI: This is SO much cheaper than buying canned enchilada sauce. Total cost for 2 QT: $4.00! (the cost of green chiles and jalapeños!
