Cornersmith - Recipes from the Cafe and Picklery

The recipes are divided by seasons, but they are not #entirely# accurate - my chives don't flower in Spring, for example. The flat-leaved ones are just forming flowers now. And also my chillies are not red-ripe enough to make their awesome looking Chilli Jam.

So you may need to play fast and loose with the seasonal recipes.

Nevertheless, it's an inspiring guide, and the recipes are not so far from "normal" that they feel intimidating. I am pleased that cumquats feature a couple of times in the book, and the Bread and Butter Pickles have a range of spices in them (I am definitely going to try those!).

There is also a great chapter on the basics of preserving - see their website too for in-person and online preserving/pickling courses.

Siberian tundra could virtually disappear by mid-millennium

Experts from the #AlfredWegenerInstitute have now prepared a computer simulation of how these woods could spread in the future, at the tundra's expense. Their conclusion: only consistent #climate #protection measures will allow roughly 30% of the #Siberian #tundra to survive to mid-millennium. In all other, less favorable scenarios, the unique habitat is projected to #disappear #entirely.
