Heat the milk till it just starts to boil. Let it cool and check the temperature by dipping your bare finger in it while counting. If the pain starts at ten it's the right temperature to add the culture and put it in the warm place.

I learned this from a woman who ran a Syrian restaurant in Flagstaff, Arizona in the mid 1990s and have used it many, many times.

So, I am looking for a copy of Aaron Cicourel‘s and Hugh Mehan‘s paper from 1983 or 1985: Universal development, stratifying practices, and status attainment. Research in social stratification and mobility 4: 3-27. There seems to be no library in Germany that provides access. Sci-Hub also failed. All papers of our special issue on #ethnomethodology and #ethnography - edited by Alex Dennis, Clemens Eisenmann, Yaël Kreplak & Christian Meier zu Verl - are now published OnlineFirst (SAGE journal Qualitative Research).

This issue contributes to the methodological and empirical reflection of ethnomethodological ethnographies and situates them in the canon of #qualitative #research.
