I wrote a small script for

▪️ extracting the audio track from video
▪️recoding as mp3
▪️also creating a mono version *)
▪️stripping all media data from these files.

I am interested to read your comments to it.

*) i. e. I apply phase filtering to create a downmix of both channels to avoid that any out of phase stereo signal will cancel out, as this occasionally results in "zero" mono signals 😬 .
