I have two that fit this bill: A Sand County Almanac by Aldo Leopold and A Walk in the Woods by Bill Bryson.
I don't re-read many books, but I come back to these frequently and find that they read and hit differently as time goes by.

My #favoritebook is The Count of Monte-Cristo, by Alexandre Dumas. It has everything: excellent prose! romance! political intrigue! betrayal! friendship! almost implacable revenge! adventure! treasure! bandits! opera! family secrets! duels! impossible love! scandals! a mysterious exotic princess! forgiveness! and even a telegraph-based financial disinformation campaign.
Every few years I read it again and am still surprised at how great it is.
