@BroadforkForVictory I like the design simplicity of these jars, and I cannot be relied on to "burp" anything — we'd end up having a messy accident. I've got 6 of them I bought a few years ago for and like them enough that I've ordered this box of them from Germany which is far cheaper than any UK source I can find. We do also use various reused jars, just not for .

Trying new things. The few remaining blackberries, and the few serranos. I chopped instead of puréed like I usually do, because I've never tried to ferment fruit before. The blackberries are the bulk of the brine now.

1) Blackberries and serranos, deseeded
2) Chopped and submerged serranos & blackberries in a mason jar with mason top (to allow air out) between two blackberry leaves. One is inside to act as a follower and tannin supplier.

More ferments on the go.

We have sweet cicely, garlic, and chilli zucchini strips and dill & shallot purple beans (which won't stay purple of course). Both sourced from both the allotment and bogalow garden.

Sadly lack time to do as much preservation and freezing as is needed to keep up with current produce gluts! Trying.

En ce moment, je m'amuse à faire des fermentées (sans alcool). Dans les trucs simples et ne nécessitant quasiment rien, il y a la ginger beer (gingembre, eau, sucre, jus de citron) et le de betterave (betterave, eau, sel). Y a aussi le , mais faut trouver des grains de kéfir et y a plus d'ingrédients (eau, sucre, citron, figues sèches et moi je mets aussi de l'abricot sec).

C'est magique, la , ça fait des bulles & du goût à partir de 3 fois rien 😋

Cucumbers suitable for pickling (Einlegegurken) are becoming an increasingly rare commodity at the places where I shop! Today I literally queued for 10+ minutes at the single stand at the market that sells them.

Can't wait to have the year's first batch of pickled cucumbers in a few days!

New chili-based projects, my first of the year! These are 7-day Sambal Oelek (Indonesian) and 14-day Harissa (Tunisian). Neither of these are normally fermented but we'll see what happens!

I'm glad my brain retained this phrase as it unlocks a passage on why molasses is hard to deal with.

It first floated to the surface as I went to sleep last night. This is the graveyard of catchy ideas.

I should have written it down or made a note on my phone. I got lucky this time but you can't rely on that happening.

Oh YES I finally got my homemade kefir to be tart enough. It is so wonderfully tangy now, yum! I had to do a one-time second ferment for 12 hours at room temperature after the usual initial 48 hours. And now I make sure to leave a cup or so of the previous batch in the fridge-jar when I strain in the next batch, and leave some in the jar with the new batch to help it get started. Share and enjoy, my little microbes!
