@BroadforkForVictory I like the design simplicity of these jars, and I cannot be relied on to "burp" anything — we'd end up having a messy accident. I've got 6 of them I bought a few years ago for #preserving and like them enough that I've ordered this box of them from Germany which is far cheaper than any UK source I can find. We do also use various reused jars, just not for #fermentation.
Trying new things. The few remaining blackberries, and the few serranos. I chopped instead of puréed like I usually do, because I've never tried to ferment fruit before. The blackberries are the bulk of the brine now.
1) Blackberries and serranos, deseeded
2) Chopped and submerged serranos & blackberries in a mason jar with mason top (to allow air out) between two blackberry leaves. One is inside to act as a follower and tannin supplier.

En ce moment, je m'amuse à faire des #boissons fermentées (sans alcool). Dans les trucs simples et ne nécessitant quasiment rien, il y a la ginger beer (gingembre, eau, sucre, jus de citron) et le #kvas de betterave (betterave, eau, sel). Y a aussi le #kéfir, mais faut trouver des grains de kéfir et y a plus d'ingrédients (eau, sucre, citron, figues sèches et moi je mets aussi de l'abricot sec).

Oh YES I finally got my homemade kefir to be tart enough. It is so wonderfully tangy now, yum! I had to do a one-time second ferment for 12 hours at room temperature after the usual initial 48 hours. And now I make sure to leave a cup or so of the previous batch in the fridge-jar when I strain in the next batch, and leave some in the jar with the new batch to help it get started.
