I finely chopped six large shallots & fried in butter until golden-brown.

Then added a pack of fish-pie mix (salmon, smoked-haddock, cod).

A couple of mins. later I added half-a-bag of pea-shoots that I had cut up. Straight after, the contents of a tin of chickpea dhal.

I topped up with a little water to give the curry an appropriate consistency.

Ten minutes later dinner was served. It was so delish, I forgot to take a photo, hence the image of a mostly-eaten dish! 🍛

Gonna be sharing a few sets today from our lunch stop on the road between Pokhara and Kathmandu.

We pulled in here a week ago and I recognised the family, it was the same place I photographed a decade ago during a photo tour. I pulled out my phone and found a photo of the young girl, and she was so happy!

In many ways my photography hasn't changed much in that decade. I've come back to what I love most. Shoot at f/2 and look for the light.
