This week’s FridayFeast is Battered Halibut with Parmentier Potatoes and a Butter, Lemon and Parsley Sauce. I’ve been working on my batter game - in this case aiming for a smooth, even texture with max crunch. I’ve used 250ml Fever Tree tonic water, 350g self-raising flour (with an extra pinch of bicarbonate of soda), 3 medium egg whites, a pinch of white pepper and paprika.
