A 45 day aged steak purchased in the San Sebastian market, brought in an insulated bag back to Porto, sous vide for two hours, cooled 15 minutes, seared 30 seconds per side. Garnished with a dollop of Gorgonzola spoon cheese and sprinkled with Pimenta D'Espelette. Eaten in about 15 minutes. It was a good 15 minutes. #food #fooddiary #homecooking
