Making Stock
If you use vegetable stock, consider making it at home.
Use a gallon sized plastic bag to save veggie peels in the freezer. I collect onion 🧅 peels, carrot 🥕 tops, leek and celery stalks, broccoli 🥦 stems and more. When full, dump into a big pot (I used Instant Pot) and fill with water to an inch from top. I like to add whole spices (pepper corns, bay leaves, coriander seeds). Cook for 30-40 min, strain and freeze in ice cube racks. Try it!

@ShaulaEvans I love the idea of using the "juice" from canned fruit! I'm going to try it too.
I make chia pudding often, as a nightcap in lieu of dessert. I use almond, coconut or regular milk, with blueberries and banana slices. The banana makes it creamy. For sweetener, I drizzle some honey or agave. Mix everything and wait for about half hour before eating so the chia plumps up nicely!

@ryan how about a lemony pasta in cream sauce (like linguine or fettucine) topped with parmesan. Or a creamy broccoli soup. I find that cream lasts a long time in the fridge so I would just use it as needed over a couple of weeks or so.
