This week’s brown-food-turned-up-to-eleven FridayFeast is Pork Loin with Prunes, Roasted Shallots and Boulangère Potatoes. The (fat on) pork was fried in butter and the sauce is made with chicken stock, butter, thyme, white wine, crushed apples, prunes, smoked paprika, garlic and a bay leaf. Shallots were halved and roasted in ghee (inner skin on) with a few baby parsnips.

This week’s FridayFeast is Battered Halibut with Parmentier Potatoes and a Butter, Lemon and Parsley Sauce. I’ve been working on my batter game - in this case aiming for a smooth, even texture with max crunch. I’ve used 250ml Fever Tree tonic water, 350g self-raising flour (with an extra pinch of bicarbonate of soda), 3 medium egg whites, a pinch of white pepper and paprika. The potatoes are Maris Piper.
