For GIS beginners like me, I've found this simple website absolutely invaluable for compressing large orthomosaics. I just got a 6.6gb tif down to 516mb! I've never found anywhere else that explains it so simply.

What I'm hearing at work is: Stitch the tiles together, do the art, and then build a pipeline that breaks the tiles apart via #GeoTIFF tools. Use #GeoJSON for roads, rivers, map labels, etc.
