I have tried steaming and baking, and had mixed results with both.
I have fresh VWG. I’m looking for a beef-like protein for use with sauce in a stiry fry or grilled with dipping sauce, a la satay.
I’m looking for more beef than chicken. I think I’m gonna try this oven marinade:

I did a batch of seitan for Letcho. earlier in the supermarket I the packed vegan minced meat too expensive for me. it's just not worth it to me, I'd rather direct my money somewhere else.
I took seitan powder, added garlic, pepper, salt, soy sauce, light miso, marjoram, paprika powder, concentrated tomato paste.... and hot water. mixed it in a bowl, let it sit for 8~10min, broke the seitan up and roasted it in a pan. than, out of the pan, cut in small pieces for the letcho. purrrfect 😻.

Scallion-tofu-pancake 😋 try it yourself
made again my scallion-tofu-pancake. Based on the chinese and korean scallion pancake with extra smoked tofu, szechuan pepper, garlic. for the dough I used wheat flour, seitan powder and spelt flour. for frying I used Rapeseed oil. Add water for a sufficiently liquid dough. Salt for extra flavour.

Ich habe wieder einmal meine Jungzwiebel-Tofu-Pancakes gemacht. Basierend auf den chinesischen & koreanischen Jungzwiebel-Pancakes. Dazu gab ich extra Räuchertofu, Szechuanpfeffer und Knoblauch. Teig besteht aus Weizenmehl, Seitanpulver und Dinkelmehl, Wasser soviel bis ein flüssig guter Teig entsteht. Rapsöl zum anbraten, Salz zum würzen.
