This bowl of golden comfort is simply pureed chana masala (I have weird textural issues with whole chickpeas.) Topped with spiced chickpea toasted crumbs, cilantro, mint, lime juice and a healthy pinch of chili flakes. Another idea for or just because.

Shortcut Frankie roll. I made the potato filling & toppings yesterday; this AM I pressed a thin layer of the filling onto a wheat tortilla, put potato side down on a hot non-stick pan for 2 min, then piled on salted red onion, pickled green chili, cilantro, grated carrot and a touch of garlic vegannaise before folding it up and destroying it. 5 min perfection for or .

Purple rice maki with spicy tuNO (chickpea this time) and avocado. Reader, it looks messy because I forgot the avocado and had to unroll the maki to add it. It IS good though! I suck, but my plant-based sushi doesn't.

Granola, two ways. Soymilk vanilla yogurt with added protein, defrosted berries, granola, half a tbsp of maple syrup, a pinch of ground vanilla and a pinch of matcha powder to make things interesting. I had this for dinner because the heart wants what the heart wants.

I get uncontrollable cravings for asparagus sometimes, even (or especially, fml) when they are out of season. I once walked 3mi in a snowstorm to get me some. Miso eggplant leftovers, lots of chopped asparagus, chili oil, wide rice noodles to bulk it up, and an egg - I'd sub the egg for eggscrambled tofu with kala namak (black salt) for an entirely plantbased option that delivers a similar flavor punch.

Another gorgeous meal for everyone: with wild purple rice. Toppings: extra firm tofu, shiitake mushrooms, carrot sticks, spinach, scallions, bibimbap sauce (gochujang, rice wine vinegar, sugar, sesame oil, minced garlic, toasted sesame seeds and a bit of water.)
