Friends know that two of my New Year's resolutions is to cook at home a lot more and to eat a lot more protein. Tonight (and tomorrow for lunch), pasta with chicken and an "arthritis-friendly" pesto sauce, made of avocados instead of cheese, spinach instead of basil, and almonds instead of pine nuts. About 40 minutes altogether, for those thinking of making it for their WFH lunch break.

Okay, I have an idea of how much I need to lose over the next year. I’m at 200 lbs now, so classified as obese. Need to lose at least 50 lbs to get to where I need to be. I’m finally at the point where I’m not gasping for air with minor exertion (thank you COVID). Been walking the last few days and doing home exercises. Sore, but feeling good. Whenever a recipe calls for a 1 1/2 cups of mayo & 16oz of sour cream, you /know/ that shit is gonna be bomb. Not even sure if this dip has a name. It was passed onto us from a friend. You eat it with torn up pieces of rye pumpernickel bread. It’s always a big hit at parties.
