Hier nun das #Rezept:

Heute mal wieder ein #Brotrezept, das durch die lange Gare des #Vorteig​es als auch des #Hauptteig​es ein tolles #Aroma entwickelt. Zudem ist es gut dazu geeignet, überschüssiges #Anstellgut korrekt zu verarbeiten. Durch dreierlei #Triebmittel: #Hefe, Lievieto Madre, #Roggensauerteig (Alternativ geht auch ein #Dinkelsauerteig) ist das Brot zudem recht gelingsicher. ;-)

Vorteig:
115g #Weizenvollkornmehl
115ml Wasser (40°)
0,3g Frischhefe

Alles gut miteinander verrühren und 12 Stunden bei Raumtemperatur reifen lassen.

Hauptteig:
Vorteig
332g Wasser (30°)
165g Lievito Madre, direkt aus dem Kühlschrank
525g #Weizenmehl 1050
17g Salz
6g #Frischhefe
2g #Backmalz enzymaktiv, falls vorrätig
30g Roggen-Anstellgut, direkt aus dem Kühlschrank

Alle Zutaten für den Hauptteig in die Knetmaschine geben. Auf niedriger Stufe 3 Minuten kneten. Sobald der Teig sich von der Schüssel löst, für 8-10 Minuten auf höchster Stufe auskneten. Der glatte Teig soll sich vom Schüsselrand lösen und den Fenstertest bestehen.

Den abgedeckten Teig über Nacht, mindestens aber 12 Stunden in den Kühlschrank stellen.

Am Backtag den Teig auf die bemehlte Arbeitsfläche geben, rundwirken und dann mit dem Schluss nach unten in einem mit #Rieselmehl - alternativ #Vollkornmehl - bestreuten Gärkorb geben. Falls eine längliche Form bevorzugt wird: Nach dem Rundwirken den Teig über die Mitte einschlagen, lang wirken und den Schluss gut zudrücken. Die beiden Seiten des länglichen Teiglings etwas flacher rollen. Mit dem Schluss nach unten in den #Gärkorb geben.

90 Minuten bei Raumtemperatur gehen lassen. Nach 45 Minuten den Ofen auf 260°-280° Ober- / Unterhitze vorheizen. Im Haushaltsherd am besten mit #Backstein /# Backstahl. Eine flache Edelstahlschüssel mit Edelstahlteelöffeln o.ö. auf den Boden des Herdes stellen. Ein Glas mit 150--200ml Wasser bereitstellen.

Nach Ende der Stückgare den Teigling vorsichtig auf einen gut bemehlten Ofenschießer kippen und in den Ofen einschießen. Das Wasser in die Schüssel kippen - Vorsicht Dampfentwicklung! Sofort den Ofen schließen.

Nach Abschluss des Ofentriebes - ca. 10 / 15 Minuten nach dem Einschießen - Dampf ablassen, Temperatur auf 215° stellen und für ca. 55 Minuten kräftig ausbacken.

Am Ende des Backvorganges aus dem #Herd holen und auf einem Abkühlgitter gut auskühlen lassen.
