Today or tomorrow there will be congee! Cooked in the Chinese clay pot which makes such a difference to the taste. I have quite a few congee recipes but will be making the one from by - Ginger jook with frizzled ginger and garlic. πŸ˜‹

I pan roasted some broccoli and served it with a tahini-soy-Lao Gan Ma Chilli Crisp-garlic sauce from by . Actually her recipe uses chilli oil but I replaced it with Lao Gan Ma Chilli Crisp. Absolutely awesome!

The recipe was warm goat’s cheese croutons with roasted beetroot, figs & apple-mustard dressing but I used Bruny Island Cheese O.D.O. instead (it really is divine with figs!) beetroot, figs, thyme, rosemary, chives, rocket & garlic

Addendum.

I found one thing (so far) to criticise about Tenderheart. There is only one built-in bookmark. A tome of 500+ pages needs 3 or 4. Even Ottolenghi knows this and puts multiple bookmarks in his cookbooks.

Sorry Plum publishing, do better in the next edition.

A final note - Hetty does not claim this book to be vegetarian. Thank you Hetty. βœ… It is a book about vegetables. Thus, keep your dietary needs in mind when planning your vegetarian meals, especially protein needs.

Recommended for anyone who truly loves food and cooking, and eats a strongly plant-focused diet.

The book's 22 chapters are divided into vegetables, from Asian Greens to Zucchini. It begins with the Tenderheart Pantry, and the first recipe is for Umami Crisp. Oh my!

There are so many cook's notes in this book, notes on gluten-free options, how to veganise, lists of substitutes, and notes on other veg that can be swapped in. The text is sufficiently large and clear, and the instructions seem logical and easy to follow.

The recipes cross cultures, and are not all asian-oriented, altho you can still see her trademarks Asian style here. You can find some of the recipes online as well.

It is an intimate book , with memories shared about each recipe.

The pictures are matt and quite lovely.

Where do I begin with this book? I could go on for ages about it.

First, it is a tome - over 500 pages. The pages are a smooth matt, excellent for writing your notes on. It is large in length and breadth too. It has the feeling of a large text book or research book, which adds to its gravitas and the awe you instinctively feel for this book.

This may be Hetty's magnum opus - it is difficult to imagine how she might surpass this.

Of course it is another to add to our list of fantastic books by female Australian authors.

I reviewed the cookbook Family by Hetty Mckinnon recently (mastodon.au/@LifeTimeCooking/1) and now I have one of her earlier and much loved books for you:

This book is "vegetarian" in the sense that it is meat-free, but not in the sense that it covers complete meals at home. It is a "neighbourhood" book, about caring and sharing food. Such a beautiful book.

Recipes: 76, of which 7o are also egg- free. YAY! πŸ’ƒ

It is her second book, and gone is the complexity of Community recipes. These are wonderful dishes using fresh ingredients made as shareable plates.

It has the same look and feel as her other books, with tempting pics, matt easy-to-write-on pages, large print, plenty of white space.

Fabulous, fabulous recipes in the style Hetty is known for.

Also very Australian in style - Hetty brings influences from around the world and makes them our own, as well as her own.

Another great book from an Australian author - we are building a global presence in the cookbook scene with the quality that has been evident in the past few years.

Recommended for everyone!

The Community cookbook by Hetty McKinnon a bit of a game changer for me

Almost all the salads have a legume or grain in them so they can be eaten as a meal

There is one that has:
- roasted diced beetroot
- pan fried diced turnip (!)
- edamame beans (available from most supermarkets in the freezer section)
- sliced radishes
- sliced spring onions
- sesame seeds

Dressing (served in the side):
- mayonnaise
- wasabi
- a bit of lime juice

Sounds weird, and there are a couple of ingredients I don’t really love normally, but it comes up brilliantly ~
