I baked this earlier today. Ideally, it should have got a bit more oven rise, but it still tastes great.
A slightly tight crumb but still nice enough in the mouth and a splendid crust.
Ta-dah. Freshly made ham and cheese bread. You gotta have to trust me when I say there's ham and Swiss cheese in there. They're too hot to handle, much less eat at this point.

Because it's been raining the whole day, I decided to make a #BakeWithJack bread I'd never baked before, because it's quite fiddly.
Dough:
225g water
10g fresh yeast
375g strong white bread flour
5gr salt
10gr olive oil
Filling:
40g lard
100gr salami (cubed)
2 hard-boiled eggs, cut small
40gr grated pecorino cheese
1tbsp chopped thyme leaves
black pepper & salt
I used fridge bacon, supermarket 'parmesan' & rosemary because I didn't want to go out to pick thyme; sue me.

Probably the prettiest sourdough bread I ever baked. It's for giving away, so I won't be able to check the crumb but it looks all right, and it had a proper oven rise, which is a sign of a happy dough.
I baked it, as usual, in my oven bread pan; 20 minutes with the lid on (and an ice-cube thrown in for steaming purposes) and 25 minutes without the lid.

Today's sourdough bread.
It's absolutely fine, and the first slice I just had, with a bit of butter and Dutch Old Cheese, was excellent - and yet, while the pink peppercorns and lavender I added to the dough did do their own magic, they also took away that specific sourdough taste.
So, this bread simply tasted like most other, very nice breads; and that's not why I bake sourdough bread.
So, while this was a fun bake, I don't think I'll do it this way again.

Day two of sourdough bread baking. Well, day one and two are prep.
In the evening of day one you feed your starter 50gr of rye flour and 50gr of warm water.
On day two you build the dough, through resting and shaping. In total there are five resting periods of 30, 120, 120, 60 & 60 minutes - before you put the dough in a banneton basket and fridge it for the night.
Oh, in between I also baked a hazelnut and cranberry bread, for our postmistress and her family.

I made Spicy Pork Floss Bread Rolls. Despite the maddening heat, I persevered kasi malapit nang mag-expire yung pork floss ko. The rolls ended up shaped unevenly and differently but who cares? What matters is sobrang sarap niya and we have bread for the next two or three days.
