They make look like #HotCrossBuns, they make taste like hot cross buns, that may have the same ingredients and the same shape and the same perpendicular white lines, but they're definitely NOT Hot Cross Buns, okay!?

Made #HotCrossBuns again this year, using bread flour, as the recipe says. The dough looks better and had an incredible texture before baking, but I think I'll go back to spelt flour next year, as it gives a softer taste.

About 1.5 kg bread flour
Mix in flour until it won't mix
Leave until it's obviously bigger
Knead in more flour if needed
Make buns
Leave to rise for about an hour
Bake in very hot oven until it be enough
2 parts lemon juice
1 part rosewater
Icing sugar to make it spreadable
When cool, draw crosses on the buns with the icing.
Un-iced buns go very well with cheese: mature cheddar or Dutch oude kaas. For vegans, swap the butter with a bit less olive oil.
