I took some inspiration from the food traditions of some of the local First Nations people in our area when I prepared these birds for our harvest celebration this year. They were smoked over local woods and glazed with cranberry, orange, garlic, onions and a little lemon. I tried to emphasize the flavors of our local plants and only added the citrus for a little acidity.
