In spite of the failure of my #injera batter earlier this week, the #Ethiopian food turned out quite well, IMHO. Largely thanks to trying my own niter kibbeh (spiced butter). Made collard greens and berbere-spiced red lentils.

Alas, after several days of #fermentation of #teff to make #Ethiopian #injera, it was doing really well until it started growing mold. Are there things we can do to make this less likely to happen? We were using the natural fermentation method, no added #yeast.

Humility works but you have to stay humble. Practice makes you a master but regardless one day one side of the griddle will make sticky in the era, and then the opposite side the next day even though both sides were washed in the same way greased in the same way Etc.
