I can pretty well recommand the classic #XMPP #Jabber and the more recent #Matrix

Both are well #Federated #InstantMessenger that you can pick servers of your choice.

And the BIG plus for #Privacy is, they can not only be had as an App, but also standalone on Desktop or in the Browser, and they dont need a phone number or any other personal information at all

I remember something about some Fediverse Servers offering accounts for these as well
