Crespelle in Brodo (Crêpes in Broth) is another holiday tradition around here. The broth is made from a slow-cooked organic chicken, then boned. Homemade crepes are filled and rolled with grated Parmigiano Reggiano (I also add some shredded chicken) and served in a bowl of piping hot broth.

#ItalianCooking #Italy #Beginner I made my way over to a vegetarian pasta dish in the Guide to Italian Cooking... I adapted it to use some edamame fettucini I already had instead of penne. I had shallots, which I sliced and put in a pan with fresh garlic, thyme, salt, and butter. I also added an Italian pasta sauce I had on hand... a good one. So not entirely homemade, but a start. And it was delicious. Fun, not perfection.
